Ingredients
- 50 gr of sugar
- The skin of a half orange
- 65 g of milk
- 15 gr of honey
- 1 egg
- 290 g fresh baker’s yeast
- 15 g orange blossom water
- 225 g of strong flour
- 1 pinch of salt
- 50 g butter at room temperature
- 100 g chocolate chips
Step-by-step processing
- First we make the sourdough: we put in the glass 35 gr of milk, 10 yeast and 65 gr of flour of strength and we put the function KNEAD
- We take the dough, make a ball and put it in a container of warm water (not too hot, leave it there until it floats, then take it out and put it aside
- Without washing the glass, add the sugar and orange peel, set 30S V PROGRESSIVE FROM 8 TO 10
- Add the sourdough with the rest of the ingredients (except butter and chocolate) and Knead
- Now add the butter and press the Knead button again
- We leave it in the glass to lighten (1 hour +/-) until it doubles in volume
- Once the chocolate has been added and the Knead function has been restored
- We put baking paper in a removable mold, covering it completely
- Pour the dough into the mould and lift it until it doubles in volume
- Brush with egg and bake 40M (preheated oven)
- Once baked and still warm, we remove the mold leaving the bottom of the mold and we cross it with some skewers from side to side and put it upside down

The last 20 or 30 M if we see it gets too toasty, we cover the panettone with aluminum foil
